4 ears of fresh corn
2 medium zucchini
3-4 Tbsp. lime juice (about 2-3 limes)
3 Tbsp. olive oil
2 Tbsp. fresh cilantro, chopped
Salt & pepper
Cut the corn off the cob. And place in a large bowl. Thinly slice the zucchini (I like to peel mine). The mandolin is great for slicing this thin. Add to corn. Toss with lime juice, olive oi, chopped cilantro and plenty of salt and pepper. Let it “age” at least 2 hours. Toss again and season again if necessary.
