Corn and Pepper Saute

4 – 5 ears of corn on the cob
1 red pepper, diced
½ of a Vidalia onion, diced
2 Tbsp. olive oil
Salt & pepper
Old Bay Seasoning

Slice UNCOOKED corn off the cob. In a nonstick frying pan, heat the olive oil (just enough to cover the bottom of the pan). Add in corn, peppers and onions. Saute 15 minutes until cooked and it just barely starts to caramelized. Season with salt, pepper and Old Bay Seasoning. Can be served hot or at room temperature.
