1 lb. tilapia
½ cup lemon juice (preferably freshly squeezed)
½ cup grated parmesan
¼ cup softened butter
3 Tbsp. light mayonnaise
3 Tbsp. chopped scallions
Soak tilapia in lemon juice for 10-15 minutes.
While that is marinating, combine parmesan with softened butter, light mayonnaise and chopped scallions. Broil the fish on the top rack of the oven for 5 minutes. Take the fish out and spread the cheese mixture over the fish. Put the tilapia back under the broiler for another 2-3 minutes until the topping is golden brown. Serve with lemon wedges.
