Grilled Peaches with Ice Cream

4 peaches, washed and cut in half—white ones are great for this
Vegetable oil
2 Tbsp. brown sugar, ½ tsp. cinnamon
Vanilla ice cream

Gently remove the pit from the halved peaches. Brush the cut side with vegetable oil. Mix together the brown sugar and cinnamon. Set aside.
Place peaches, cut side down over medium high heat for 3 minutes. Brush peel side with oil and flip—this time over indirect heat. Sprinkle enter with cinnamon sugar, reserving a bit. Continue to cook for about 8 minutes until sugar melts and peach is soft.

Place 2 halves in each serving bowl and top with your favorite Vanilla Ice Cream. Drizzle with a little Amaretto and enjoy!
