We went berry picking with the grandkids this week and what a bounty of berries! We came home and made my friends Suzie’s delicious Blueberry Coffee Cake! In a large bowl, cream 1/2 cup softened butter with 3/4 cup sugar. When fluffy, add in 1 egg and 1 tsp. vanilla. In another bowl combine 2 cups all purpose flour with 2 tsp. baking powder, 1 tsp. cinnamon and 1/2 tsp. salt. Alternately add flour and 2/3 cup milk (2% or whole) and beat until well mixed. Fold in 2 cups of washed blueberries. Transfer to a greased 9″ square pan.
Mix topping-1/2 cup butter, 1 cup brown sugar, 1/2 cup flour, 2 tsp/ cinnamon and 1 cup chopped pecans (optional). You can use your hands or a fork blend (or even the food processor). Crumble evenly over batter.
Bake in a preheated 350 oven for 40-45 minutes.
