Abracadabra Bars

What you need:

+ 1 c. sugar
+ 1/2 c. vegetable shortening
+ 1 c. North Carolina Sweet Potatoes, cooked and mashed
+ 2 tsp. vanilla
+ 2 c. flour
+ 1 tsp. baking soda
+ 1/2 tsp. salt
+ 1/2 tsp. ground cinnamon
+ 1/4 tsp. ground cloves
+ 1/4 tsp. ground ginger
+ 1/4 tsp. ground nutmeg
+ 1 c. raisins or dates
+ 1/2 c. bran flakes, crushed
+ 1/4 c. butter or margarine, melted
+ 1 c. confectioners' sugar
+ 1 Tbsp. milk
What to do:
1. In electric mixer bowl, beat together sugar and shortening until light and fluffy. Add sweet potatoes and vanilla and beat well to blend.
2. In large bowl, combine flour, baking soda, salt, cinnamon, cloves, ginger and nutmeg. With mixer at low speed, gradually add dry ingredients to sweet potato mixture; beat until well blended. Stir in raisins.
3. Spread mixture into an 11x17" greased baking pan. In bowl, blend melted butter and bran flakes. Sprinkle over batter in baking pans; pat gently. Bake at 350° F. for 15 min. or until toothpick inserted near center comes out clean. Cool in pan on wire rack.
4. In small bowl, combine confectioners' sugar and milk until smooth. Drizzle over cooled bars. Cut into bars or diamonds.

awesome and easy - I used white whole wheat flour, sugar substitute and only did 1/2 of the powder sugar drizzle!
