* 1/4 c. slivered almonds * 2 orange roughy, skate, cod or haddock fillets (6oz. each) * 2 tsp. butter * 2 Tbsp. white wine or chicken broth * 2 Tbsp. fresh lemon juice * 2 drops hot pepper sauce * dash salt * dash paprika
What to do:
1. Place almonds in a small microwave-safe dish. Cover and microwave on high for 1-2 min. or until lightly toasted. 2. Place the fillets in a 9-in. microwave-safe pie plate. Dot with butter and sprinkle with almonds. Combine the remaining ingredients; pour over fillets. Cover and microwave at 70% power for 5 min. or until fish flakes easily with a fork.
